In case you missed it, a new vendor has taken over the coffee shop at the Coal Loader in Waverton. From Silvia, who some readers might know from her cult gluten-free and refined sugar free baked goods available at markets all over Sydney, including North Sydney’s produce markets, and Le Marche French market in Willoughby.

The owner, Silvia Philip is a pioneer of gluten-free baking in Australia. She began experimenting with gluten-free cooking over 20 years ago. Convinced that the growing awareness of intolerances to gluten would inevitably lead to a bigger demand for quality gluten-free products.

Fast forward to 2024, and this passion has culminated in a successful food business and a team of cooks. Silvia’s talented team works magic in the kitchen, crafting a wide array of baked and naturally sweetened delights.

And lucky for the North Sydney community, From Silvia has brought their delectable food to the Coal Loader cafe.


Expect Winter warmers like sweet potato and red lentil soup served with baked panelle or croutons, lamb empanadas with bush chutney, caramelised apple, pork and fennel sausage rolls, fresh plum tarts, and their famous brownies. People come from all over Sydney to pick up these at their markets. And as one customer shared on Instagram, they were so popular in his house, they caused a riot!
