Nestled in the heart of Castlecrag, Ganache Patisserie has been a much-loved local institution for more than 25 years. Today, French owners Johann Malin and Vianney Rouille are proudly continuing its tradition while bringing fresh passion, authenticity and a strong focus on community.

Originally from France, Johann and Vianney share a vision of creating a true French bakery experience while preserving the warmth and charm locals have loved for decades. Johann leads the pastry and production side with his expertise and craftsmanship, while Vianney focuses on customer experience and building a strong team culture, believing that creating a happy, supportive environment behind the scenes is essential to delivering quality and creating memorable experiences for customers.

Ganache is more than a bakery, it is a neighbourhood meeting place. From morning coffees and weekend treats to celebration cakes and everyday moments, customers regularly tell us they love not only the quality of our products, but also the welcoming atmosphere and genuine sense of community.

Everything is handmade daily using traditional French techniques and quality ingredients, from buttery croissants and pastries to artisan cakes and savoury creations. For Johann and Vianney, Ganache is about more than pastries: it is about bringing people together and sharing a little piece of France with the Lower North Shore community.
